Vegetarian Italian Stuffed Zucchini

Tender baked zucchini with fresh tomatoes, mozzarella cheese, garlic, Italian seasonings, with focaccia croutons crushed and sprinkled over top. Delicately browned, vegetarian Italian stuffed zucchini makes a delicious, lovely and healthy side dish.

1 medium (2 to 3 inches in diameter) tender zucchini
several small tomatoes (I used about 6- 2 inch diameter tomatoes and cut them into quarters)
1 to 2 cups of shredded mozzarella cheese to taste
1 cup of crushed focaccia croutons( put some in a plastic bag and crush them with a rolling pin)
1/2 of a sweet(or hot) pepper cut into small strips
2 Tablespoons italian seasonings
