Veggie Frittata - This is an easy breakfast or brunch entree that can be made ahead and reheated throughout the week. Plus it's loaded with veggies and tastes amazing!

1 red pepper, chopped
1 small onion, chopped
1 medium zucchini, chopped
1 (1 lb) package frozen chopped spinach, thawed and well drained
1 tbsp olive oil
1 tbsp fresh thyme or 1 tsp dried
10 eggs
1/2 cup milk
1/2 tsp salt
1/4 tsp pepper
1 cup shredded sharp cheddar cheese
