This light and tasty homemade veggie pizza is the best thing I have eaten in weeks. I’ve had some wonderful dishes, but I’m not sure any of them come close to this veggie pizza with herb tomato crust. It’s the best homemade pizza I’ve had to date. It’s INSANE. The dangerous part? Making the pizza during the day when no one’s home and there’s a FULL incredible pizza in front of me, draping in cheese that keeps screaming out “EAT ME”!! Herbed Crust:
½ cup whole wheat flour
½ teaspoon dried parsley or 1½ teaspoons fresh chopped parsley
½ teaspoon dried rosemary or 1½ teaspoons fresh rosemary
1 teaspoon active dry yeast
½ teaspoon sugar
¼ teaspoon salt
¼ teaspoon pepper
½ cup water
1 small can (5.5 ounces) or ½ cup of V8 juice
1 teaspoon olive oil
1½ to 2 cups bread flour
Toppings:
1 can (8 ounces) pizza sauce
1 medium green pepper, chopped
1 cup fresh mushrooms, sliced
1 Roma tomato, seeded and chopped
1 cup pitted olives, sliced
1 small red onion, thinly sliced into rounds
1 to 2 cups part-skim mozzarella cheese, shredded
Granulated garlic, to taste
Oregano, to taste
