Watermelon Feta Dessert with Chia Seeds was born out of a desire to combine the Mediterranean watermelon - feta combination with the a chia seeds dessert.

1/4 cup chia seeds
2 tablespoons honey
1/2 cup feta cheese
8 ounces watermelon
1/2 cup mascarpone cheese
1/2 cup heavy cream
basil or mint
