White Balsamic Vinaigrette over Grilled Peach and Avocado Salad

2 peaches, quartered
2 ripe avocado, quartered
1-2 teaspoons of canola oil
5 cups of baby spinach

For the dressing:
¼ cup white balsamic vinegar
1 garlic clove, chopped
1 small shallot, chopped
2 teaspoons thyme, chopped
2 teaspoons honey
½ teaspoon of salt
1/4 teaspoon pepper
½ cup olive oil
