Whole Wheat Chai Spice Muffins

The comforting flavor of chai tea infused into tender and soft muffins with a perfect crumb topping. These make a perfect quick breakfast or easy snack.

2 cups white whole wheat flour
1/3 cup sugar
1 Tablespoon cinnamon
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 Tablespoon melted coconut oil
1 egg
2 teaspoons vanilla extract
2 Tablespoons honey
1/2 cup nonfat greek yogurt
1/2 cup hot water
1 chai tea bag
Topping
1/4 cup flour
1/4 cup brown sugar
2 Tablespoons butter

3 T cornmeal
3 T unsweetened cocoa powder
Pinch salt
3 eggs
1/2 c salted butter
1/2 c light corn syrup
1 t vanilla extract
1 unbaked 9-inch pie crust

  1. Preheat oven to 350 degrees F. In a large bowl, whisk together sugar, cornmeal, cocoa and salt. Add eggs, melted butter, corn syrup and vanilla; mix well. Pour into unbaked pie crust.
