Whole Wheat Coconut Oil Banana Bread

This Banana Bread, made with coconut oil and whole wheat flour is a favorite of ours. It's healthier than regular Banana Bread and so incredibly moist.. We're addicted!

1 2/3 cups whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
2 large eggs
1 cup loosely packed brown sugar
2/3 cup coconut oil, melted and slightly cooled
4 bananas, mashed
1 teaspoon vanilla extract
Optional: 1/4 cup sweetened shredded coconut, for sprinkling on loaf
