Fill a large pot about 1/2 way with water and place it on the stove on high, then add two chicken bouillion cubes. Pull chicken off rotisserie and put into the pot. Cut up two or more stalks of celery, a handful of baby carrots and half of a large yellow onion depending on your preference and add to pot. Add salt and pepper to taste. Allow soup to reach a boil while you make the dumplings.
For Dumplings: (two ways)
1st way: Pour 1 cup of your GF bisquick into a mixing bowl and add 1/3 cup of milk. Stir mixture till a soft dough forms, add more milk grafually to create desired consistency. Form small balls for dumplings or create larger balls for biscuit sized dumplings and drop into soup, allow water to continue to boil to cook dumplings to desired doneness (about 10 minutes).
2nd way: follow the directions on the box to make bisquits, create small balls for dumplings or larger ones for bisquits and roll into extra bisquick till coated with powder. Drop into soup while boiling and allow them to cook till desired doneness (about 10 minutes).
Once finished scoop into a bowl and sit back and enjoy an easy, worry-free, weeknight dinner :)
