Yummy Gluten Free Dairy Free Pancakes

After months of trial and error, I've come up with the best tasting gluten free pancake recipe. It is basically the same recipe my mother used years ago, with some replacement ingredients.

1/2 cup of all purpose gluten free flour (Bob's Red Mill)
3/4 cup of Very finely ground Almond Flour (jkgourmet)
3 tsp of gluten free baking powder
1/4 tsp salt (optional)
2 Tblsp canola oil
1 Egg
1 C Vanilla unsweetened almond milk (Blue Diamond)
Sift the flour, baking soda, and salt Mix in the egg add the milk and mix as you stir. (you may not need the entire cup depending on how large of egg you use.) Your batter should be smooth and able to poor smoothly Add in the oil at the end. Add a cap full of canola oil to a medium high pan. Poor in your pancake mix. You can use a measuring cup for consistent size You will see bubbles around the sides, when you see bubbles in the center turn the pancake over for another minute or two. Make 3 large pancakes (pictured), or 4-6 small pancakes. Garnish with Amber Agave Nectar to keep it processed sugar free.
