A jazzed up jambalaya cheesy rice one-pot meal!

1 (8 oz.) box "Zatarain's" Jambalaya Rice With Cheese
2 1/2 cups water
2 Tbsp. butter
1/2 yellow sweet onion, diced
1/2 green bell pepper, diced
1 (16 oz) can dark red kidney beans, drained
1 (14 oz.) package "Eckrich" Skinless Smoked Sausage
Split sausage links in half length-wise. Slice every 1/2 inch or so down lengths to make bite sized pieces. In a pot on medium-high heat, brown sausage pieces along with diced onion & bell pepper. It is not necessary to use oil, as grease from sausage will come out of meat as it cooks. Add in water & butter as directed on package. Bring to a boil. Add in "Zatarain's" Jambalaya Cheesy Rice Mix & stir thoroughly. Return to a boil. Reduce heat to low, cover & simmer 20 minutes, stirring occasionally. Fold in drained kidney beans. Replace lid & continue to simmer an additional 5 minutes. Remove from heat. Let stand 5 minutes. Fluff with fork before serving. Note: Can easily be doubled.
