This Greek Quinoa Salad is healthy and delicious.

1 cup quinoa
2 cups vegetable broth
1 pint grape tomatoes
1 medium cucumber
1/2 a medium red onion
1/2 cup black olives
1/2 cup crumbled feta
3 cups spinach, lightly packed
1/4 cup olive oil
2 tbsp. red wine vinegar
1 tsp. Dijon mustard
1 garlic clove, crushed or minced
1/2 tsp. dried basil
1/2 tsp. dried oregano
1/2 tsp. salt
1/4 tsp. pepper
2 cups vegetable broth
1 pint grape tomatoes
1 medium cucumber
1/2 a medium red onion
1/2 cup black olives
1/2 cup crumbled feta
3 cups spinach, lightly packed
1/4 cup olive oil
2 tbsp. red wine vinegar
1 tsp. Dijon mustard
1 garlic clove, crushed or minced
1/2 tsp. dried basil
1/2 tsp. dried oregano

1/4 tsp. pepper
Combine quinoa and vegetable broth in a medium saucepan. Bring to a boil.
Cover pan and reduce heat to low. Cook until broth is absorbed and quinoa is tender.
