A fresh salad with thinly sliced zucchini, yellow squash and cantaloupe

1 large zucchini, shaved
1 large summer squash shaved
1/4 cantaloupe shaved
1/4 cup thinly sliced onion
1 tsp. kosher salt
1 tbsp. rice vinegar
1 tsp. olive oil
1 tsp. water
2 tbsp. chopped cilantro
1/8 tsp. fresh ground black pepper
10 pistachios, chopped
1 large summer squash shaved
1/4 cantaloupe shaved
1/4 cup thinly sliced onion
1 tsp. kosher salt
1 tbsp. rice vinegar
1 tsp. olive oil
1 tsp. water
2 tbsp. chopped cilantro
1/8 tsp. fresh ground black pepper
10 pistachios, chopped
Place zucchini and summer squash in a large colander placed on a plate. Toss with salt. Let sit for about 5 minutes. Thoroughly rinse the squash to get off all the salt. Lay on a paper towel to dry.
