Baked Eggplant with Orange Sauce

Oil-free vegan eggplant, very easy.

1 pound eggplant
¼ cup orange juice
¼ cup chopped tomato
¼ cup chopped onion
2 tablespoon soy sauce
Preheat the oven to 375 degrees Fahrenheit. Peel the eggplant and cut into small cubes. Mix orange juice, tomato, onion and soy sauce. Put the eggplant in a baking dish with cover. Pour sauce over the eggplant, mix well. Cover the baking dish, and bake for 30 minutes. Serve with chopped green onions (optional)
