500 grams chicken cutlet

5 serving Melba toast crumbs

150 gr. mozzarella cheese grated
200 gr. sautéed mushrooms
5 tablespoon finely minced onion

3 clove of garlic crushed and minced

0.5 teaspoon dried basil

0.5 teaspoon dried oregano

0.5 teaspoon marjoram

Lemon juice
Salt and pepper to taste
Mix Melba toast crumbs with dry spices. Dip cutlet in lemon juice and coat with crushed Melba spice mixture. Fry on high heat without oil. Top with mozzarella cheese and sautéed mushrooms, baste with olive oil and bake in 350 degree oven for 20 minutes. Add a little water to the bottom of the pan if necessary. Garnish with fresh basil, parsley, leftover Melba spice mixture and salt and pepper to taste.
