Potato and Sweet Pea Patties

Potato and sweet peas make a perfect match. Make mashed potatoes out of this or shape them into patties and pan-fry them.

2 small russet potatoes
½ cup sweet peas, thawed
2 garlic cloves, minced
¼ teaspoon salt
¼ teaspoon ground black pepper
2 tablespoon olive oil

Peel and cut potatoes into cubes.
Boil a pot of water, cook potatoes for 15 minutes or until soft.
Mash the potatoes with peas, then add garlic, salt and black pepper and mix well.
Shape the potato mixture into patties. (If you want to eat it like mashed potatoes, stop here.)
Heat oil in a pan, cook the patties about 3 minutes each side or until the outside turns dry or golden.
Keep the heat low so the patties don’t get burned.
