The miso paste acts like an embedded gravy.

2 medium russet potatoes
1 medium zucchini
1 tablespoon white miso paste
1 tablespoon water
1 medium zucchini
1 tablespoon white miso paste
1 tablespoon water
Peel and cut the potatoes into 1-inch chunks.
Peel and cut the zucchini into tiny cubes.
Put potatoes in a pot, cover with water, bring to boil and simmer for 15 minutes.
White cooking the potatoes, preheat oven to 350 degrees Fahrenheit.
Dissolve the miso paste in water.
Drain the potatoes and mash with a spoon.
Mix the potato mash with zucchini and miso paste into a baking dish. (Add some ground black pepper if you want.)
Bake for 15 to 20 minutes.
