Spinach Cucumber Soup

A greenish soup served warm or cold.

2 cups chopped fresh spinach
1 cup chopped cucumber
4 crushed garlic cloves
1 cup chopped onion
1/4 cup chopped green onion
4 cups vegetable broth or water
Freshly squeeze of lemon juice (to taste)
Chopped walnuts (for garnish)
Salt (to taste)
1 tablespoon olive oil
Heat oil in a pot, sauté garlic, onion and green onion for about 2 minutes. Add salt to taste. Add spinach and cucumber and cook for about 5 minutes, stirring. Go to the next step immediately if it becomes too dry. Pour vegetable broth or water into the pot and boil. Lower the heat and simmer for about 10 minutes. Let cool a little, then puree in a blender. Add some lemon juice, and garnish with walnut and additional spinach. Note: You can omit oil by skipping the first two steps and cook all the vegetables together.
