Thyme Tomato Trumpet Mushroom

These trumpet mushroom look like scallops, marinated in thyme tomato sauce, they serve as wonderful appetizer.

4 trumpet mushroom
1 tablespoon olive oil
1 teaspoon lemon juice
1 tablespoon fresh thyme
¼ cup finely chopped tomatoes with juice
Salt to taste
Sugar to taste (optional)
Cut trumpet mushroom into rounds about ½-inch thick. Save the ends for other dishes. To make marinade, mix olive oil, lemon juice, thyme, tomato, salt and sugar if using. Soak mushroom in marinade overnight. Heat some olive oil in a pan, sauté mushroom 1 minute per side.
