This appetizer is delightful for any meal, especially in summertime.

1 cucumber
1 cup alfafa sprouts
Freshly ground pepper
½ tsbpespoon mayonnaise
½ tablespoon ketchup
1 teaspoon lemon juice
1 Nori sheet, cut into 1-inch wide strips.

Prepare a plate. Peel the cucumber, then cut into 1 to 2-inch long segments. Cut each segment in half, and scoop out the seeds to create a “ditch.”
Sprinkle some ground pepper on the cucumber.
Mix mayonnaise, ketchup and lemon juice.
On each piece of cucumber, place some alfafa sprouts in the ditch, drop a little sauce, then wrap a nori strip around the cucumber to hold together the alfalfa sprouts.
Moisten one end of nori strip with a little water, and press two ends together. (If you are too lazy to do this, just tuck the ends of nori strip under the cucumber. But be sure to hold everything together when you eat.)
