Apple Peanut Butter Cookies With Flax & Chia

A healthy, gluten free cookie made with oatmeal, brown rice and powdered peanut butter that’s low calorie and vegan. Turn the oven on because these Apple Peanut Butter Cookies With Flax & Chia are a delicious & nutritious sweet treat!

For the cookies:
2 medium apples, cored & diced
1 flax egg (or 1 large egg white if not vegan)
2 tbsp coconut oil
1/2 cup brown rice syrup
1/4 tsp almond extract
1 cup GF rolled oats
3/4 cup brown rice flour
1 tsp cinnamon
1 tsp pumpkin pie spice
1 tsp baking powder
1 tsp baking soda
dash of sea salt

For the drizzle:
2 tbsp Powdered Peanut Butter
1.5 tbsp warm water
