1 tbsp. olive oil
1 cup ripe apples (chopped)
2 cups baby spinach (chopped)
1 tsp garlic (crushed/chopped)
2 cups vegetable broth (low sodium)
½ tsp salt
½ tsp black pepper (crushed)
