Authentic Spanish Rice

I LOVE Spanish Rice! But only the real stuff that you get when you go to Mexico, or to Mexican restaurants. Whenever I search recipes, however, I get the lame-o recipes that just tell you to add salsa to the rice before cooking it. That's not real Spanish rice, silly. So finally, I found one of my Hispanic friends who can cook Spanish rice and asked for the recipe. Here it is folks!

3 TBS lard (oil works too)
1 cup long-grain white rice
1/2 cup chopped onions
1/2 tsp Cumin powder
1/2 tsp Cayenne pepper
1/2 tsp garlic powder
Salt
1/2 cup tomato sauce
2 cups chicken broth
In a large sauce pan, over medium (or medium-high) heat, heat oil. Add rice and onions and stir constantly until the rice begins to brown slightly, and the onions are soft. Add the spices and mix together....

Homemade Chicken Kheema

A versatile clean eating recipe which can me made to last a few days! Perfect for those flaor craving meal prep days.

1 lb ground chicken
1 tbsp ginger
1 tbsp garlic
1 tbsp turmeric
2 tbsp coriander powder
1 tbsp tomato paste
1-2 tbsp chicken masala-optional (this measurement depends on your spice level preference)
