Bacon Feta Frittata

This low carb dish is great for Sunday brunch. Use the veggies listed in the recipe or use veggies you already have in the fridge.

5 eggs scrambled
2 cooked bacon strips crumbled
1/3 cup feta cheese
1/4 cup sliced mushrooms
1/4 cup chopped yellow, green, and orange bell pepper
5 grape tomatoes sliced
1 scallion sliced
Salt & Pepper to taste
1 tablespoon butter.

1 tablespoon butter.
Preheat oven to 350F
In a 8x8 baking dish spray with non-stick cooking spray.
Mix together all of the ingredients except for the butter.
Pour mixture into baking dish.
Cut butter into 4 equal pieces.
Float butter pieces on top of mixture. Separate the pieces equally apart.
Bake for 25 to 30 minutes. Make sure center is cooked through.
When you remove the frittata out of the oven you will see the melted butter on top. Carefully tip baking dish in a circular down and up motion so the melted butter runs over the top of the frittata coating evenly.
