Baked Veggie Spaghetti Squash

I love a good veggie-packed dinner, especially when spaghetti squash is involved. This pseduo-pasta bake is a great alternative dinner idea for anyone looking to lighten up their carb load.

1 whole spaghetti squash
1 tbsp olive oil
1 tsp garlic, minced
1 cup baby bella mushrooms
1 cup spinach
~10 grape tomatoes, halved
1 1/2 cups tomato sauce (I used one labeled “garden” that also had onions, carrots and tomatoes)
parmesan cheese, shredded
Bread crumbs (mine were homemade from Challah!)
