Banana Oat Zucchini Muffins

Moist and nutritious gluten-free muffins made with all natural ingredients. A great way to use up zucchini from the garden!

1/2 cup pure oats (I use Only Oats)
1/2 cup pure oat flour
1 tsp guar gum
1 cup brown rice flour
1/4 cup tapioca starch
1 tsp baking soda
1/4 tsp salt
2 ripe banana, well mashed
1½ cup zucchini, grated with skin left on
1 large organic egg [*vegan option: 1 tbsp ground chia + 3 tbsp warm water]
1/3 cup pure maple syrup
1 tbsp apple cider vinegar
1/4 cup + 2 tbsp. coconut milk
1/2 tsp pure vanilla extract
1/2 cup dairy-free chocolate (chips or chunks), optional
1/2 cup pure oat flour

Preheat oven to 350.
If you are making this recipe vegan then first mix together chia and water, stir with fork, and set aside for five minutes.
