Becky's Gluten Free Spanish Rice

As with most convenience foods, my go-to Spanish Rice mix contained wheat as a thickener. While there are gluten-free mixes available, I wanted to try my hand at a homemade version. A quick review of recipes on the internet shows that this dish is naturally gluten-free. No need to use cheap thickeners when you use real ingredients. 3 Tablespoons oil or butter
1 onion, minced
1 garlic clove, minced
2 cups of long grain rice, uncooked
GF Chicken or GF vegetable stock - enough to match the amount of water called for on the cooking directions of your rice
1 can diced tomatoes & green chilies, such as Rotel
1/4 tsp cumin (optional)
pinch of oregano
1 tsp sea salt
