Beef Ragout

This recipe is for an easy one-pan meal which I adapted to accommodate our family's nightshade allergy. It has become a family favorite.

2 lbs. ground beef, lean
1/2 tsp salt
1/4 tsp ground white pepper
1 1/2 tsp thyme leaves
1 1/2 tsp oregano leaves
1 large onion, sliced and then cut in half
6 medium carrots, thinly sliced
4 medium light-colored sweet potatoes
1/2 cup water
2 cups organic sweet corn (optional) or any frozen vegetable you like
