Beef Roast in Pinot Noir Sauce - Winosity

3 lbs beef chuck roast
1/2 pound shallots
1 cup Pinot Noir wine
1 tbsp olive oil
1/4 tsp pepper
2 tsp salt (or to taste)
1½ tsp granulated onion
1½ tsp granulated garlic
1½ tsp chopped fresh thyme leaves
