Filet mignon marinated in an apricot curry sauce then grilled, the perfect special occasion dinner.

20 ounces Filet Mignon, cut into 1 1/2 inch cubes

Marinade:
1 tsp. olive oil
1 cup chopped onion
1 tbsp. chopped ginger
4 garlic cloves, chopped
4 bay leaves, broken into large pieces
2 cloves
1 tsp. turmeric
1 tsp. curry powder
1/2 tsp. allspice
1/2 tsp. ground cumin
2 tsp. kosher salt
1/2 cup red wine
1 cup beef stock

Sauce:
1/2 cup apricot preserves, low sugar or sugar-free
2 tbsp. white vinegar
1 garlic clove, minced
1 tsp. fresh grated ginger
4 tsp. light brown sugar
1/2 tsp. ground coriander
1/4 tsp. cinnamon
1/4 tsp. curry powder
1/2 tsp. kosher salt
