Beet and Carrot Slaw

Beets and carrots are both deliciously crunchy and surprisingly sweet, which is why we combined them to create the slaw of all slaws.

6 Medium Carrots, Peeled and Thinly Sliced
2 Medium Beets, Peeled and Thinly Sliced
3/4 Cup Parsley, Roughly Chopped
2 Tablespoons Lemon Juice
1/4 Cup Red Wine Vinegar
1/2 Cup Red Onion, Finely Diced
Salt and Pepper
1 Teaspoon Honey
1/3 Cup Extra-Virgin Olive Oil
3/4 Cup Toasted Pine Nuts
