Bitter Gourd Jaggary Curry

Kakarakaya (Bittergourd) ,Bellam (Jaggery) Kura (Curry) is one my Mothers specialty dish with one of the most bitter tasting Vegetable:Bitter Gourd. I just got a little hint of its bitterness with mild sweetness from Jaggery as my mother cook it.we love all as this curry tastes Bitter,sour,Salty,Spicy and Sweet. This is my husband's favorite dish too. please try and taste this once, we will never forget and you definitely love the curry.

Bittergourd-4 medium ones
Onion-1 chopped finely
Jaggery-1/3 Cup grated
Red Chilli Powder-1-1/2 tsp
Coriander Powder-1-1/2 tsp
Curry leaves-few ,
Oil-6 tbsp,
Tamarind – 20gms
Fenugreek Seeds – 3 Seeds
Bengal Gram – 1 1/2tsps
Black Gram – 1tsp
Mustard Seeds – 3/4tsp
Cumin Seeds – 3/4tsp
Turmeric Powder – 1/4tsp
Salt to taste,
Garlic cloves-9 numbers
Dry red chillies -2 numbers
Chop off the ends and slice all the Bittergourds into a very thin circular discs. Using the seeds is optional. But I like the crunchy taste and used them without discarding. Wash properly by adding little bit salt and turmeric and .kept aside. Heat oil in a pan and add chopped onions and little bit salt and fry until golden brown in color. later add bittergourd pieces and fry until golden brown or it turns into slightly yellowish . add red chilli powder and salt and water for it and add tamarind juice to it. cook in medium flame until water get absorbed later add jaggery and fry for few seconds and kept aside. later take another pan and add oil and add mustard seeds,fenu greek seeds,bengal gram,black gram,curry leaves and dry red chillies and garlic cloves ,once it is done add season the curry with this.lastly add chopped coriander and the dish is ready to server hot with rice and rotis.
