Healthy Black Rice salad topped with plenty of fresh vegetables, mango, and a coconut-lime dressing.

•1 cup black rice (we used Lotus Food Forbidden Rice)
•2 scallions (diced)
•1 small red pepper (diced)
•1/2 small cucumber (diced)
•1 mango (peeled and diced)
• juice from half of a lime
•1 tablespoon olive oil
•1/4 cup coconut milk
•2 tablespoons honey
•1/4 teaspoon cayenne oil
•fresh cilantro (chopped)
