Butternut Curry-Coconut Soup

Silky-smooth and with incredibly rich flavor, you dont want to miss this butternut and curry-coconut soup! It is creamy, delicious and loaded with vegetables.

2 TBS oil
2 medium-large onions, chopped
2 stalks celery, chopped
4 cloves garlic, minced
1-inch piece of fresh ginger, coarsely chopped
1 teaspoon ground coriander
1 TBS mild curry powder
2 quarts (8 cups) low-sodium chicken broth
1 TBS brown sugar
1 large sweet potato, peeled and chopped into 2-inch pieces
1 large butternut squash, roasted or peeled and chopped into 2-inch pieces
1 teaspoon sriracha chili sauce
2 teaspoons salt
freshly ground black pepper to taste
20 ounces coconut milk (about 1 1/2 cans)
