Calabacitas (cah-lah-bah-SEE-tahs) means "little squash" in Spanish. This is a traditional southwestern side dish made of squash and corn.

2 Tablespoons vegetable oil
1/2 cup chopped onion
1 yellow squash, quartered and cut into 1/4 inch pieces
1 zucchini, quartered and cut into 1/4 inch pieces
15 oz. can of corn, drained
4 oz. can of mild green chili
1/4 cup water
salt and pepper to taste

1. Saute onion in skillet with oil.
2. Transfer the onion to a medium baking dish and add cut squash, corn, chili, and water.
3. Mix ingredients right in the baking dish.
