I’m excited to share with you this delicious carrot and apple oat muffin recipe. These muffins are gluten-free, dairy-free, vegan and contain a lot of fiber. They are a great breakfast, a wonderful dessert and a perfect snack any time of the day.

Dry ingredients:

2 cups of oat flour
1 tablespoon of baking powder
1 teaspoon of baking soda
A pinch of salt
A pinch of sugar
1 tablespoon of cinnamon
1 teaspoon of ginger – optional


Wet ingredients:

1 medium ripe banana
2 medium apples
1 medium carrot
¼ cup of milk of your choice (or water)
Sweetener of your choice – optional
