Carrot and Coriander Soup

Glorious, warming and delicious, this is a simple soup that I\\\\\'m particularly proud of experimenting with. The end result? Well try it and see for yourself. I\\\'m positive you won\\\'t be disappointed! Serves 4

Ingredients
1 tablespoon of olive oil
1 medium onion, roughly chopped
1 clove garlic, finely chopped or crushed
4 large carrots, washed, peeled and roughly chopped.
500ml/1 pint of vegetable or chicken stock.
1 handful of fresh coriander, washed and roughly chopped.
1 teaspoon of ground coriander
1 teaspoon of black pepper
1 tablespoon of olive oil
