Catherine's Spaghetti Pie
April 28, 2013
174
A delicious baked pasta dish.
8
6 ounces spaghetti
2 eggs, beaten
1/4 cup Parmesan cheese, grated
2 tablespoons butter
1/3 cup onion, diced
1 cup sour cream
1 lb. Italian sausage or seasoned hamburger
6 ounces tomato paste
1 cup water
4 ounces Mozzarella, shredded
2 eggs, beaten
1/4 cup Parmesan cheese, grated
2 tablespoons butter
1/3 cup onion, diced
1 cup sour cream
1 lb. Italian sausage or seasoned hamburger
6 ounces tomato paste
1 cup water
4 ounces Mozzarella, shredded
Break spaghetti in half and cook as directed. Drain but do not rinse. While still warm, combine spaghetti with eggs and Parmesan. Pour into a large, buttered pie plate and pat the spaghetti up to the edges of the pie plate to form a "crust".
Melt butter in small pan over medium heat. Add onion and saute until tender. Remove from heat and immediately stir in sour cream. Spoon sour cream mixture over the spaghetti in the pan.
Cook sausage or hamburger until brown. If you use hamburger, season with salt, pepper, oregano, Italian spices, onion powder, garlic. Add tomato paste and water. Reduce heat and simmer 10 minutes. Pour over the mixture in the pie plate.
Bake at 350 F. for 25 minutes. Remove from oven, place mozzarella cheese over the top, then return to the oven until the cheese is melted and bubbly, about 10 minutes.
