Cheesy Quinoa Mac n Cheese

Healthy alternative to pasta mac n cheese, but keeps all the cheesy goodness!

1.5 cups quinoa, rinsed and drained
1 cup broccoli florets (or your veggie of choice)
2 large eggs
1 cup skim milk
2.5 cups sharp cheddar cheese, more for sprinkling
1. Cook quinoa according to package. 2. Lightly saute broccoli. 3. Preheat over to 350 degrees F. Coat 9x13 dish with cooking spray. 4. Whisk together eggs and milk in large bowl. Stir in quinoa mixture and cheese until some of the cheese melts. Transfer to baking dish. Sprinkle cheese on top. 5. Bake 30-35 minutes.
