Chicken and Black Bean Enchiladas

Need some quick healthy ideas for lunch? Try the chicken, black bean, and corn nacho mix and then roll it up in a tortilla for a quick and fast lunch. Whether you are at home or at work you will love it!

1/3 cup Chicken, Black Bean and Corn Nacho Meat
1 8" tortilla
1/4 c. Green Chili Enchilada Sauce
1/2 oz cheese
2 T Greek Yogurt
Place the Nacho meat on the tortilla and roll up. Top with Green Chili Enchilada sauce and cheese. Heat in the microwave until hot. Top with Greek Yogurt Serve with Jicama Salsa and/or Easy semi-Fresh Salsa.
