Chicken Bacon Ranch Pasta Bake

A delicious cheese sauce coats the chicken and bacon in this amazing pasta dinner.

8 ounces pasta ( penne )
1/4 cup diced red onion
1/2 cup chopped green peppers
1 Tablespoon + 1 teaspoon olive oil, divided
1 teaspoon minced garlic
1 ( 14 ounce can diced tomatoes )
2 cups cubed ( cooked chicken )
1/2 cup chopped ( cooked bacon )
1 cup chopped spinach leaves
1 ( 12 ounce can evaporated milk )
2 1/2 cups shredded pepper jack cheese ( divided )
1/2 cup ranch salad dressing
1/2 cup shredded cheddar cheese
