Chicken in Red Pepper Sauce

This Chicken in Red Pepper Sauce is a perfect dish for meal prepping. You can make a big batch at the beginning of the week and eat it with rice, quinoa, pasta, couscous. It’s really convenient.

800 g of homemade roasted red peppers
1 onion
3 cloves of garlic
20 g of celery root, or a 1/4 of a celery stalk
2 carrots
1 tablespoon of olive oil
2 handfuls of spinach
1 chicken breast
5 stalks of asparagus
100 g of rice
salt and pepper
1 teaspoon of dried oregano
