Flavorful, filling, and just a little bit spicy. Gluten free, Paleo, and Whole30 friendly!

1 pound chicken, cooked and shredded
2 cups shredded carrots
3 medium stalks celery, finely diced
1 onion, finely diced
2 cloves garlic, minced
2 quarts vegetable broth
1 (28oz) can diced tomatoes
1 (4oz) can diced green chiles
1/2 teaspoon chili powder
1/4 cup fresh cilantro, chopped
2 Tablespoons lime juice (or, to taste)
1 teaspoon olive oil
