Chicken Satay Noodle Bowl

This Asian-inspired noodle bowl combines rich peanut sauce with tender chicken and stir-fried veggies.

1 small package of Rice Noodles
1 tsp sesame oil

For the Chicken Strips:
1 package Maple Leaf Prime Chicken Breasts (.72kg or 1.5lb)
1 tbsp soy sauce (or Tamari)
1 tbsp peanut oil
2 tbsp brown sugar
½ tbsp ginger, minced
1 tbsp lime juice
1 small red thai chilli, finely chopped

For the Peanut Sauce:
1 small onion, finely chopped
1 clove garlic, crushed
1 small red thai chilli, finely chopped
1 tbsp brown sugar
4 tbsp smooth peanut butter
1 tsp soy sauce (use Tamari to make this recipe Gluten Free)
1 cup coconut milk

For the Veggies:
2 tsp peanut oil
1 cup red bell pepper, cut into strips
1 cup yellow bell pepper, cut into strips
1 cup carrots, cut into strips
1½ cups mushrooms, sliced
1½ cups snow peas, strings removed
¼ tsp salt
1 tsp sesame oil

For Topping:
½ cup chopped roasted peanuts
