A thai-inspired coconut milk soup with fresh shrimp and chicken tpped with cilantro and bean sprouts.

•2 cans unsweetened coconut milk
•2 cups chicken stock
•1.5lb boneless, skinless chicken breast (cut into 1 inch cubes)
•12 medium uncooked shrimp
•9oz organic lo mein noodles (We used the Roland brand - three bundles)
•1 tablespoon fish sauce
•1 tablespoon brown sugar
•thinly sliced red onion
•bean sprouts
•cilantro
•lime
•4 dried chilies
•2 shallots
•6 cloves garlic (peeled)
•1 2 inch piece of fresh ginger (peeled, chop in half)
•1/3 cup cilantro
•1 tablespoon ground coriander
•1 teaspoon curry powder
•1 teaspoon garam masala
