Chicken Teriyaki Bowl like Pei Wei

My favorite date night is to go to Pei Wei for some Chinese food and then to the Bookstore with the hubs and read magazines and peruse the new books. I SOOOOO love the Teriyaki Chicken at Pei Wei, that I experimented until I think I've come pretty darn close to a good copycat recipe. So try it and see what you think. It is delicious and pretty easy even on a WEEKNIGHT!

3 Chicken Breasts seasoned with garlic salt, season salt and lemon pepper
2 medium carrots sliced thinly
1/4 cup red onion
1/4 cup red, orange or green pepper
1/2 cup chopped cabbage in 1/2 inch chunks
6 mushrooms sliced thin
1/3 cup sugar snap peas
a few shakes garlic salt
1/4 cup orange sauce mixed with 1/4 cup teriyaki sauce (or more if you like more sauce) I like the bottled Panda Orange sauce and the Ebarra Spicy Teriyaki sauce.
a slight pinch red pepper flakes (optional)
Chop up the veggies you like and stir fry in a little oil and salt and set aside. Cut up your chicken and sprinkle with a little lemon pepper or Lawry's season salt and fry up in a Wok or fry pan. When done...

A Spanish omelette is also known as tortilla de patatas in Spain where it is a tapa and it consists of just four ingredients plus seasoning. It is a Spanish classic dish for very good reasons. It is simple to make, it is nutritious and absolutely delicious. Oh, Spanish tapas!! Aren't these simply the best?



6 large eggs
1 large onion I used red organic
3 med potatoes sliced or cubed
2 tbsp olive oil
1/2 tsp salt
1/2 tsp black pepper or some chilli flakes/cayenne pepper
6 tbsp parsley fresh -chopped (optional)
