Chinese Style Chicken Fried Rice

1 large chicken breast, cooked and cubed
3 cups rice, cooked
3/4 cup sliced carrots
1/4 cup frozen peas
1 1/2 teaspoon minced garlic
1 egg
1 tablespoon olive oil
1/4 cup soy sauce
Salt and pepper
Heat olive oil in a skillet over medium heat. Add carrots, peas, and garlic and cook until veggies are tender. Add egg and scramble with the veggies. Add rice, chicken, and soy sauce, and stir. Salt and pepper to taste, then serve.
