Chipotle Pork Tacos with Pineapple Salsa

These tacos are quick and delicious with a deep, smoky flavor from the chipotles, cumin and smoked paprika. The pineapple salsa is the icing on the cake!

Pineapple Salsa:
2 cups fresh pineapple, chopped small
1 cup sweet apple, finely chopped
1/4 cup shallots, minced
3 Tbs cilantro, chopped
1 Tbs lime juice
1/2 tsp ground cumin
1/8 tsp salt

Tacos:
1 Tbs olive oil
1 cup onion, thinly sliced (1 medium)
4 garlic cloves, minced
3 lbs pork tenderloin, trimmed and sliced into strips as you would for fajitas
1/2 cup chicken broth, low sodium
2 Tbs cider vinegar
2 tsp dried oregano
3 tsp ground cumin
3 tsp smoked paprika
salt and pepper, to taste
1 pint cherry tomatoes, quartered
2 tsp chipotle purée* (more or less, to taste)
12 6-inch corn tortillas or 6 whole wheat tortillas, warmed
To make the salsa: 1.Combine all salsa ingredients in a medium bowl. Refrigerate until ready to use, this can be made the day before!
