Chopped Thai CHicken Salad

Super tasty and loaded with veggies. This salad is a perfect week night meal for the whole family.

Dressing
2 tbsp low sodium soy sauce
1 tbsp sesame oil
2 tbsp rice vinegar
2 tbsp raw honey
1 tbsp lime juice
1 tbsp extra virgin olive oil
2 cloves of garlic, crushed

Salad
16 ounces frozen shelled edamame
4 cups mixed greens, chopped
2 cups chopped Napa cabbage
1 cucumber, diced
1 cup shredded carrot
½ red bell pepper, sliced
½ yellow bell pepper, sliced
4 chopped green onions
½ cup fresh cilantro
1 lb cooked chicken, chopped or shredded

Marinated Taro Root

A marinated snack that can be used to replace late night bad habit cravings!

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
