Cinnamon Lemon Squares

These ooey, gooey, and tart squares burst with citrus and just a hint of warm spice. They can be modified to be dairy free or sugar free, but any way you slice them, they are rich and flavorful... perfect for any occasion!

CRUST:
1 stick of melted butter (use Earth's Balance brand to make these dairy free)
1/4 cup granulated sugar (or Stevia or Sweet and Low)
1 cup of flour
Generous sprinkle of cinnamon

FILLING:
2 eggs, beaten
1 cup of sugar (or Stevia or Sweet and Low)
Juice from 3-4 lemons (large)
2 tbls. flour
dash of salt
1/2 tsp. cinnamon
Preheat oven to 350 In a bowl combine 1 stick of melted butter, 1/4 cup granulated sugar and 1 cup of flour. Stir until dough forms and press into an 8x8 inch glass pan. Sprinkle with cinnamon if desired. Bake at 350 for 20 minutes. In the meantime, combine the following: 2 eggs, beaten 1 cup of sugar juice from 3 lemons (large) 2 tbls. flour dash of salt Mix until thick liquid forms and pour over the crust - return to oven for 20-25 minutes at 325. Let cool for about a half hour and cut into squares. Garnish with fresh lemons or cinnamon and sugar.
