Coconut Almond Granola

5 cups old fashioned rolled oats
1 1/2 cup shredded coconut
1/4 cup flax seed
1 cup sliced almonds
3/4 tsp. salt (iodized, not kosher)
1 1/2 tsp. cinnamon
1/2 tsp. cardamon
2 cups brown sugar
1/2 cup water
1/3 cup melted coconut oil
Mix dry ingredients in a large bowl. Mix together the water and coconut oil and pour over dry ingredients. Mix thoroughly. Spread granola in an even layer on a lightly greased, rimmed cookie sheet. It will mound up and be very full. Bake at 325 degrees F for about an hour, stirring every 15 minutes for even baking. Let granola cool for about 15 minutes in the pan, then dump out and break into clumps.
